"Transition Pieces" are all the rage right now. Fashion blogger after fashion blogger giving insight into what pieces you need, to successfully transition your wardrobe from the sweltering heat of summer to the brisk air of fall. Well my friends, I have another transition piece for you - the transition dessert. I present to you, the perfect in-between late night snack for the interim between summer and fall: The Pumpkin Spice Waffle Ice Cream Sandwich.
Summer beckons most of our sweet cravings toward ice cream cones, ice cream sandwiches, and iced coffees - cool, crisp, refreshing. But if anything says "fall is here", it is the warmth of Pumpkin Spice. Pumpkin Spice lattes, Pumpkin Bread, and let's not forget these Pumpkin Spice Cupcakes from last week!
So when the afternoons are still peaking into the upper 80's, but the evenings start to cool down to sweater weather, this dessert is all you need to combine the best of both worlds. But be prepared to want to make them year-round, because they are messy and delicious, like all the best desserts are ;)
2 Pumpkin Spice Waffles (I used Nature's Path Gluten-Free version)
Ice Cream of your choice
Halloween or Fall sprinkles
First, toast your waffles to your liking - let them cool completely before moving on.
Once cool, slab your ice cream onto one waffle - spread it carefully so you don't crush the waffle underneath.
Add your second waffle on top to create a sandwich, and then start smoothing around the edges to make a seamless ice cream sandwich. The back of a spoon works really well for this!
Pour your sprinkles on a plate (you don't have to, but it's much easier than trying to add them to your sandwich from the container - trust me.)
Roll that baby around - and do it fast! Your ice cream is probably ready to melt at this point!
And that's it! Admire your beautiful fall dessert for about 2 seconds, and then devour it before it melts all over the place. We also made a version where we cut it in half, and covered the inside of each of the halves with sprinkles - you could even go around the outside AND the inside of the halves - get crazy with those sprinkles, girl.
