This might be one of my most favorite desserts EVER. I'm not really a sweets person, I mean, I love a good scoop of gelato every once in awhile (who doesn't?), but for the most part when I have cravings, they tend to lean toward the wonderful world of SALT.
Rob however, has MAJOR sweet cravings. And Anna (my other boyfriend ;) is in the same boat. The three of us eat together often and the two of them are usually on the same page as soon as we're done with dinner: "we have ice cream, right?"
Since Anna eats primarily gluten-free (and I try to, sorta... most of the time...when Anna is around ;) - this was a perfect dessert for both of us! Gluten-free, sweet AND salty! And Rob eats anything. For real.
The very best part? THEY ARE SO EASY! And you guys know how much I love easy. And while you're at it, browse some of the other creatively healthy dessert concoctions we've come up with: Chocolate-Pistachio Clementine Slices, Faux Ice Cream (made from bananas!), or these Flourless Peanut-Butter Chocolate Chip Cookies!
Glutinos Pretzels (you can obviously use regular pretzels, but careful - that gluten will getcha!)
Chocolate Chips (we used dark chocolate #noregrets)
Baking Pan or large platter
First, make your sandwiches. Just slather some peanut butter between two pretzels and set aside.
When all of your sandwiches are made, melt your chocolate chips. I just threw mine in the microwave for 30-second intervals and stirred often until melted. But you can be a real adult and use a double-boiler.
Then, dip your sandwiches in the chocolate! We dropped them in, and used a fork to toss around so the entire pretzel sandwich was smothered. Transfer to wax paper.
Place your tray of chocolate-covered sandwiches in the fridge for at least 30 minutes, or until the chocolate sets.
AND THAT'S IT. Yasssss gurl.
Seriously though - how good do those look?! And they taste even better. Bonus: they're probably better for you than most desserts; dark chocolate for antioxidants, peanut butter for protein, and the pretzels are gluten-free so that's basically like eating a salad. Right?
