Florida this past week was spectacular and I promise that I have pictures coming soon, BUT, I'm exhausted, have not unpacked, and am still trying to adjust to being back at work (and not being in 80 degree weather *le sigh*). So that being said, I cannot fathom going through my camera right now to separate out the good, the bad, and the blurry.
In the meantime however, I have two super easy recipes for you. Flourless Peanut Butter Chocolate Chip Cookies, and a Holiday Mule! The Holiday Mule is not my recipe - Rob's mom cut it out of a magazine for us and I'm not sure which one it was to give credit, but here it is nonetheless:
2 oz cranberry juice
1 oz vodka
2 oz chilled ginger beer
1/2 lime for juice
Fill mule mug (or any glass because how many people actually own mule mugs?...says the girl who owns mule mugs) with ice, add all ingredients, and squeeze the lime juice in top.
Now make one, sip on it, and get started on these cookies!
1 cup sugar
1 cup peanut butter (creamy or crunchy, whichever you prefer)
1 and 1/2 teaspoons vanilla extract
1/2 teaspoon baking soda
Dark Chocolate Chips (however many your little heart desires)
Preheat oven to 350. Mix all ingredients except chocolate chips, until well combined. Once you have dough, mix in chocolate chips. Spoon cookie dough out into rough rounds, onto a baking sheet lined with parchment paper.
I chose not to press down the classic criss-cross pattern the top, because they tend to spread too thin while baking. Bake for 10-15 minutes until golden brown (time range depends on how large your cookie dough balls are).
