Ya know what's better than ice cream? Not this dessert. But it IS healthier, and it's pretty easy as far as desserts go. All you need is a few clementines (you can use regular oranges too), some pistachios, dark chocolate chips, and wax paper.
Peel your clementines and separate the individual wedges
Shell the pistachios, chop them up into tiny pieces, and place on a plate.
Melt your chocolate (I use Ghirardelli Dark Chocolate chips and just melted them in a microwave).
Dip each wedge halfway into the melted chocolate, roll in your chopped pistachios, and set on the wax paper to dry. Voila!
