I think I may be in love.
With crustless quiche. Or Fritatta. Or whatever the hell you want to call the brunch-worthy goodness we created this weekend.
The best part about this recipe is that as long as the basics are there (eggs, cream, milk) you can add in whatever veggies and meat you want! Don't like bacon? Throw sausage in! Just kidding, be normal and like bacon - then add bacon and sausage. Ha, jk. Sorta.
Annndddd you can just pop this in your fridge and have a slice on work mornings when you don't feel like making fancy pants breakfasts - it reheats well!
Here's what I used:
- 5 slices bacon
- 2 cups lightly cooked broccoli (I used a microwaveable steam pack)
- 1 cup cheese (I used cheddar)
- 4 ounces baby bella mushrooms (sliced)
- 5 eggs
- 1 cup milk
- 1/2 cup chopped onion
- 1/3 cup heavy cream
- Salt, pepper, and whatever seasonings you like!
- 9 inch baking dish
**disclaimer: buy a block of cheese and shred it yourself if you have time. It's cheaper for the amount of cheese you'll get, and it doesn't have weird potato starch in it like bagged shredded cheese.
First, grease your 9-inch baking dish with butter, and pre-heat your oven to 350.
Then make your bacon - we cooked our bacon in saute pan (don't judge my stained pan - it just gets lots of love), but you can bake it instead!
Set aside on a paper towel (for bacon grease sopping).
Saute your onions in a bit of butter
Add mushrooms and saute until soft - turn heat off.
Chop your bacon!
Whip eggs in a bowl with milk and cream, and add ALL ingredients in (I also added salt, pepper, thyme, onion powder, and parsley)
Mix it all up, and toss it in your greased baking dish.
Bake for 45 minutes and die over the smell of your kitchen.
Let rest for 10 minutes before slicing. I know it's hard to restrain yourself, but it won't slice nicely if it's too hot.
